Home Fries made with Tomato, Cilantro and Chipotle.
If you have stopped recently, you might have noticed I cooked some home fries. Some people have been asking to give out the recipe, however, I tend to improvise in the kitchen a bit so I have no bullet points for these, so Ill do my best to make sense.
Serves Aproximately 4 
8-10 potatoes (which ones to get? Russet potatoes, Red potatoes or White potatoes will do fine, Kennebec and Yukon also!) Obviously if you use the smaller potatoes 8-12 will be good, if the potatoes are on the bigger side, like Russet then 4-6 will do. Once the potatoes are cut they will probably fill a decent size skillet.
So this is where my improv gets in. All those potatoes should be cut in decent chunks not too small and not too big.
Tomatoes: 3-4 diced tomatoes. This will give more fluidity to the cooking time. (Potatoes take a while to cook all the way, and since I dont like drowning them in oil, the moisture of the tomato will buy us time to cook and it’ll flavor the potatoes (win-win!)
Cilantro: 50-70% of the skillet should have the fine chopped cilantro, however the cilantro should be added once the potatoes are close to being completely cooked. Why? Because if you add the cilantro at the wrong time, it will simply get charred. Now how can you tell if the potatoes are cooked? use a tooth pick and try to go through one of them, if it goes in easily (Thats what she said -RIP The Office) then your potatoes are good to go!
Now at this point, the tomato has already cooked and the potatoes have soaked the juices. The potatoes will be getting brown, but resist taking them out! Visually those potatoes need to get a nice brown and the outside peel needs to get crispier (Not black-but crispy)
“Where is my chipotle salsa man?” - The dish is almost ready yet they need that extra moisture and kick. Buy canned chipotle peppers, once opened youll notice that when you scoop out the peppers, there is generally a bunch of salsa left, use all of that and put them all around the simmering potatoes.
Keep your stove in a medium-low (I advice more on the low side) That way your potatoes are slowly getting there, instead of burning them.
Once your potatoes are cooked and the outside peel crispy. You are good to go.

I have heard only good things of Padrecito (In Cole Valley)

Swan Oyster Depot (A must, amazingly fresh food, very very very friendly staff, just a great experience)

Rosamunde sausages (which happen to be next door to Toronado, which is an all beer bar, you are a beer “enthusiast”, this place is a must)

Magnolia Pub (They craft their own beer and their food is great. On Haight & Masonic)

Pearl Burgers (Post and Jones)

Molinari (Colombus between Broadway & Vallejo)

Those are only a few. SF is paaaaacked with amazing eateries, so by all means try some but I encourage you to get lost and try other places. That’s part of the fun!

Hemlock (Polk st & Hemlock alley way)

Pops Bar (heavily populated with amazing cynic tattooed people, but thats the charm, deal with it or just go to another bar. The best part of this place? SUNDAYS BACON BLOODY MARY’s - On 24th Between York and Bryant)

Beergarden on Hayes (this is more of a yuppie beer garden but still great place)

Nice cocktail bars

- Rye (Geary & Leavenworth)

-Local Edition (Market and Kearny)

- The famed Bourbon & Branch (its quite the experience, expenssive but worth every penny)

- Rickhouse (Kearny Between Bush and Sutter)

Two of my personal favorites

-Cafe Zoetrope (On Kearny and Broadway, and this building is one of my favorites in SF, beautiful and well.. owned by Francis Ford Coppola

-Vesuvio’s (amazing bohemian bar… Absinthe? yes please!)

Again, I would advice you to check some of these places, but go wild, SF is just impossible to cover in a couple of days. But I can assure you it’ll make you want to come back for more!

Campechana Gigante. Giant flour tortilla, and amazing bistec and trompo meat. The clash between the pork and beef is less of a clash and more of a seductive dance. Perfectly cooked and the flavor!!!! Top that with the warm grilled onions and their house made spicy green salsa. I went to Tacos Melany last night. (Former Tacos Caro). Near the famed TEC university there are several cheap eats for those who venture into the night. Tacos Melany is one of them. I used to know them as Tacos Caro (after the old lady with the same name who served there until 4 am) I have always remembered their amazing trompo tacos and infamous campechanas.
