Tacos al pastor
I have posted this one before, but if you are not drooling over this photo or breaking your diet then I dont know whats wrong with you.
This must be one of the things I miss the most about visiting a taquería on Mexican soil. Tacos here in the US (and I am talking about SF so far) are good, but there is something missing. No I dont want to sound pedantic, but for example If people from Japan were to go to Mexico, they could probably find decent japanese joints however there will always be that “something” missing.
So far tacos al pastor here arent cooked like in Mexico, there are very few places that have a trompo (health regulations?), but for me is so interesting to go to see people who are clearly mexican and have lived in Mexico, they know how the dish is prepared and still choose to go on another road, I dont condemn it but those changes in how a dish is prepared is an interesting decision.
This picture will be as close as youll get to authentic tacos al pastor, In Mexico there are endless al pastor spits lighting the corners of Mexico feeding hungry costumers, As you can see the meat is cut in thin layers instead of chunks. And that step makes all the difference in the world, because many places in Mexico put a pinapple and with the heat the juice will drip all over the seasoned pork meat… man I am just salivating.
I hope you guys enjoy or hate (because you are craving them badly) as much as I do.
