Tacos al vapor, estilo norteño: con tortillitas de harina… una verdadera delicia!
This submission was from Monterrey in Mexico. This is an amazing picture because it exemplifies how different the cuisines can be even within the same country.
Tacos al vapor (steamed tacos) or Tacos sudados (sweaty tacos) in Mexico City will always be with corn tortillas however in Northern Mexico while they love their corn tortillas youll see the use of more flour tortillas. Nothing wrong about it, just different… and different is good!
Why tacos sudados you might ask? well hundreds of tacos are made and stacked on top of each other in a basket with a nice cloth. Then the basket is closed and the steam and juices of the “guisos” (stews, different dishes like potato, pork, chicken, beans, rajas) will promptly be rubbing and soaking the tortillas (now you get the name sweaty?)
